Come spend the day with like-minded bakers learning about all things sourdough through a hands-on baking experience. We will be building loaves of sourdough bread and creating your own seasonal galette (a rustic, open-faced pie of sorts!) with a sourdough pie crust -- utilizing all of the different characteristics that a healthy sourdough starter has to offer. Through detailed guidance, you will: - Mix and shape sourdough loaves of your own, using your sense and assessing the dough at each step along the way. - Get to smell + taste some fresh sourdough right out of the oven. - Learn the basics of sourdough, and tips for success around mixing, shaping, baking and scoring. - Make an incredible, flaky, sourdough pie dough that will be the vessel for our seasonal galette. - Go home with all of the information you need to keep your jar of sourdough starter alive and well, and productive for future baking. We will discuss wild yeast, the benefit of fermenting flour, and how you can use and maintain your take-home starter. Part way through our workshop, we will break for a leisurely hand-crafted lunch, taste testing fresh sourdough and a variety of other seasonal accompaniments. Whether you are a weekend warrior of a baker, or have never baked sourdough before, you will leave with new-found knowledge and confidence to continue your sourdough baking adventures at home. You will also acquire a lifeline to Lauren for future sourdough queries that arise in your baking journey. Spend the morning cozied up in the Red Hen Artisanale studio, making a delicious, seasonal pie, while learning new techniques and detailed information for success! You can even use this workshop to get ahead on some of your Thanksgiving Baking! We will begin the workshop with discussing different types of pie dough, the importance each ingredient plays in the final product, and then get into physically working the butter into the flour to create a delicious, flaky, and very forgiving and versatile pie dough. Bakers will be guided through demonstrations and instructions on how to creatively and individually decorate your pie -- whether it be with intricate lattice work or different cuts outs and textures. During the Decorative Pie Workshop, each guest will create a masterpiece of a seasonal pie to go home with and bake in your oven -- filling your home with a wonderful aroma of fresh baked goods! Or, you can always pop your pie in the freezer to bring out down the road for a special occasion. Chewy..soft..flavourful..warm, and covered in butter and flaky sea salt..cream cheese, smoked salmon, capers and red onions! However-you-like-them-Bagels! Come learn the history, inns and outs of bagels, and get in a little Baker's workout by hand-kneading together your very own batch of naturally-leavened dough. We'll touch on the basics of Sourdough, feeding some for you to take home with you, and boil and bake some previously made bagels to sit down with and enjoy lunch. At the end of the workshop, each baker will go home with: :: A booklet containing the day's recipes :: A jar of sourdough starter for you to continue on in your sourdough baking with :: 6 sourdough bagels to be boiled and baked in the comfort of your own home, and share with your friends and family (or not!) -- anytime in the next 12-24 hours after our workshop!
