Outre son emplacement et son hébergement, tout l'attrait et la richesse de cet établissement réside dans la bienveillance, la disponibilité et le professionnalisme de l'équipe qui officie autour du chef Alexis Saint-Martin qui prodigue une cuisine de haut niveau originale et savoureuse (n'oublions pas la garbure du Bistrot de l'abbaye, tenu par Aurélien, son frère) Si vous devez venir à Saint-Savin pour une soirée étape ou en vacances, c’est bien au Viscos qu’il faut séjourner et dîner.

Une demeure ancienne qui, pour ne pas coller exactement à l'image classique des établissements "4 étoiles", n'en est que plus charmante, imprégnée qu'elle est d'un esprit familial et chaleureux ; un esprit véhiculé par tous les membres de l'équipe, employeurs comme employés, que nous avons eu le plaisir de rencontrer durant nos trois journées de séjour. Le Viscos est en outre idéalement situé, au cœur du village montagnard de Saint-Savin, paradis, notamment, des cyclistes amateurs de grands cols. Si l'hôtel nous est apparu tout à fait plaisant, que dire du restaurant, si ce n'est qu'il comptera à n'en pas douter parmi nos meilleurs et pourtant nombreux souvenirs gastronomiques. Chacun des trois dîners nous fut un enchantement, tant par la variété -- maîtrisée -- de la carte que par la qualité des mets et l'excellence de leur préparation, parfois rehaussée d'un zeste d'originalité. Disons-le sans ambages (et sans modestie...) : une étoile au Michelin nous semblerait justifiée. Bref, si la providence nous en laisse le loisir, Le Viscos nous reverra !

Un lugar con mucho encanto. Cena y desayuno espectaculares. El único pero, las habitaciones que no se correspondían con las fotos y desmerecen la calidad de la restauración y atención de todo el personal del hotel. Muy recomendable, sin duda.

Repas ordinaire et cher. Nous sommes surpris par l’absence d’avis, mai et juin ? Chambres grandes mais vieillottes. On se demande sur quel aspect, il y a 4 étoiles? Sommes habitués à comparer ce genre d’établissement et nous serions heureux que l’on donne des arguments de justification. Merci et à bientôt.
