A monk I met in Pai told me: "Chiang Rai is where Thailand keeps its secrets." He was right. It looks like a fever dream of heaven and hell rendered in mirrored glass and plaster. By 9 AM, it's a parking lot of tour buses. I arrived at opening time. The mist was still lifting off the surrounding rice fields. The temple glowed white against grey sky. The bridge over the sea of reaching hands was empty. I crossed it alone. The hands of the damned reached up. The crispy noodles on top shatter when you touch them with your spoon. I added pickled mustard greens and a squeeze of lime. The grandmother who runs the kitchen came out to watch me eat. I gave her a thumbs up.
