🍷 01. Wine Tasting Before Dining
A revolutionary tasting experience is about to begin. Three outstanding winemakers from Styria—Tement, Engel, and Langmann—have each selected a representative wine embodying the local terroir and craftsmanship. Austrian chef Heinz Reitbauer, inspired by the wine, creates dishes that complement it, aiming to enhance and elevate the wine's deeper flavors, engaging in a dialogue of tastes.

A single drop of wine reflects the soul of South Styria. Founded in 1959 by Josef Tement and passed down through the Manfred family, the Tement family winery is now managed by the third generation—Stephen, Armin, and his wife Monica. They have brought the flavors of this land to international acclaim.
The winery adheres to a close-to-nature philosophy, prioritizing the expression of terroir. Their core Sauvignon Blanc, grown on the Ziereggg and Grassnitzberg plots, showcases exceptional minerality and complexity. Since 2020, the winery has been officially certified by Demeter and has joined the "respekt-BIODYN" alliance, infusing its sustainable farming philosophy into every inch of the land.
▫️Weingut Langmann Lex Winery
The Langmann family's vineyards are situated in one of Austria's most rugged and steep grape-growing regions, offering breathtaking views at stunning angles. Located at the foot of the Koralpe mountain in West Styria, the crisp Alpine climate and clear air nurture grapes with distinctive character.
For 250 years, the Langmann family has been dedicated to cultivating the native Blauer Wildbacher variety to produce the distinctive Schilcher rosé wine. In addition, thanks to West Styria's cool climate and ideal soil conditions, the Langmann family also focuses on growing Sauvignon Blanc and producing sparkling wines.

Located in the Styria volcanic region, Weingut Engel Winery is a place where bold ideas and passionate dedication combine to create vibrant flavors. Owner Simon Engel, a former musician, transformed his parents' farm in Tieschen into an organic winery now renowned for its unique wines. He and his wife, Andrea, live and work here, respecting the laws of nature while boldly breaking conventions to create flavors unique to this volcanic land.
🖥️ 02. Human vs. Machine: When AI Meets a Styria Culinary Expert
In a Styria kitchen, a special contest is unfolding: local culinary artist Christoph Mandl and artificial intelligence receive the exact same creative requirements. On one side is a craftsman deeply versed in local customs, their fingertips imbued with the essence of the seasons; on the other is a digital brain driven by algorithms, capable of instantly analyzing millions of recipes. Which interpretation do you prefer?
**First Course** Ingredients: Venison, Gravenstein apples, cornmeal porridge, young chicory, lavender
Design Concept: A pale pink venison fillet, wrapped in a fragrant vanilla-infused crispy crust, is delicately arranged on a plate at varying degrees of doneness. Cornmeal porridge surrounds the meat, while Gravenstein apples and young chicory are placed in the center. The plating blends futuristic elegance with rustic decorative elements, giving the dish a unique charm.
**Second Course** Ingredients: Rainbow trout, snails, saffron, peas, mint
Design Concept: A golden-brown, crispy rainbow trout appears to float lightly on the plate, surrounded by carefully prepared snails. Bright green peas adorn the rim of the plate, contrasting beautifully with specks of golden saffron sauce. The plate, made of simple and elegant ceramic, conveys a pure and minimalist aesthetic.
Third Course
Ingredients: Lemon, melon, truffles, curd, wild herbs
Design Concept: A vibrant dessert, a work of art, with all elements arranged like a painting on the plate. Refined truffles and wild herbs are delicately arranged, complemented by thinly sliced, translucent melon. The entire dessert resembles a magnificent floral garden adorned with royal elegance, blooming on the plate.
