I did some research, and the shredded pork in their sauce is first simmered in meat broth, making it incredibly flavorful, and the sauce isn't overly salty. When mixing the noodles, remember to let the sauce coat them for a while so that every strand of noodle is infused with flavor. I always want a bowl whenever I pass by.
I came to this restaurant before specifically for their side dishes. The stir-fried pork cracklings with chili peppers were cooked to perfection, crispy but not greasy. The bamboo shoots with pickled cabbage and diced pickled mustard greens were also very flavorful, a perfect accompaniment to congee. I suggest you ask the owner to bring out a few extra side dishes when ordering; they're even more appetizing than the main dishes.
