Worried that the eSIM wouldn't work well, I bought a physical SIM card and picked it up at Hong Kong airport. It was very convenient; surprisingly, both the eSIM and the physical SIM worked very well. The network was quite good, but Hong Kong was too crowded—skyscrapers, narrow streets—it felt very oppressive.★

Excellent SIM card, worked right away. It's possible it might stop working for you after a few days. In that case, contact your local CMHK office. In our case, I think we had to register the SIM card in our name, if I remember correctly. Be prepared for that. Otherwise, the reception is excellent, even supporting 4G in the parking lot.★
