I took this class with Francesca in early September. Francesca was so lively and did a very nice job of ensuring everyone understood and heard each and every step. After reading some reviews I wasn’t sure if I was going to actually learn how to make the sauces; Francesca explained the entire process step-by-step. A month later, I was able to accurately re-create a Tuscan Ragú with homemade pappardelle. The wine was great. The people were great. It was an overall excellent experience. Thank you, Francesca, for sharing your family recipes! I came before the rest of my group came to Italy; I wish I would’ve been able to find some thing for our large group just like this!

This class stood out as highlight in a trip full of highlights. I cannot recommend the class enough. I hope to one day return. The view, the staff, some of the best pasta I had my entire trip, there is nothing but overwhelming positive things to say. A trip to Florence is incomplete for me now without Francy’s Pasta class.

We had an absolutely wonderful time at Pasta Class Florence. Our chef/teacher Andreas was skilled, friendly, and funny, with a talent for drawing the whole group together as well as personalized attention to each student. The class size of 13 was great for getting a variety of students from all over the world but still giving us a chance to chat with our neighbors and teacher. We made three types of pasta (knife-cut papperdelle, wire-cut spaghetti, and filled mezzalune which Andreas then showed us how to turn into cappelletti). Andreas also demonstrated making three sauces (beef shank ragu, olive oil with garlic and chili pepper, and browned butter flavoured with sage and garlic), but also made a special tomato and herb sauce for the vegetarian in our group. We learned how to make pasta using just a rolling pin and knife, a pasta rolling machine, and a wire “pasta guitar.” We also received a PDF of recipes after the class as well as Andreas’ personal recommendations for places to eat and shop. One of the highlights of our week in Florence, and I would 100% recommend for foodie friends!
