The olive tree, Olea Europea, is a tree whose cultivation is adapted to a dry and sunny climate. Its pruning is carried out every year and aims to control its growth and improve the exposure of its branches to the sun. The fruits are ripe in November, when manual harvesting begins using combs and nets.
