The tour took us to a charming little vinegar factory south of Modena. Our hosts, Marianna and Patricia, were incredibly polite, and Marianna guided us through the production process and the storage rooms for their decades-old balsamic vinegar. Finally, we enjoyed a tasting of various balsamic vinegars and blends with cheese, for example. You could really taste the difference between the various age categories and how much the type of wood used in the barrels—oak, juniper, or cherry—influences the flavor of the final product. We thoroughly enjoyed the tour. :)
