This is a gem of a place. First-rate food being served by wide-eyed eager-to-learn students under the watchful eyes of their experienced professors. Desserts were out of this world, big compliment to the pastry chef!

Located in the Royal Sava Hotel in Lausanne, a Michelin knife and fork in 2017 is mainly Spanish style. There are relatively many people dining at night, it is recommended to locate in advance. The main dish tastes very good, it is recommended to try, but the vegetable juice presented tastes strange, and most people are estimated to not accept it.

We had a vegetarian menu and a chef tasting menu of the day, and both were of excellent quality throughout. The service is friendly, just that the food explanations are a bit too quick, so that they tend to be very difficult to recall. One point to improve on is the waiting time between courses, which seemed a bit long. Overall, for a 5-course menu we spent almost 3 hours, of which about 2 hours was waiting time. A big plus was that the chef came out to greet the guests. With its outstanding food the restaurant should be considered for a Michelin Star soon.

The sushi was ok but you can find much better for the price. soya sauce was way too salty, so we couldn't really enjoy it. Boeuf croustillant was not good . the taste of venigar was dominant and the amount of crust was much more than beef itself.The waitress was nice
