Zhangguan Hezha is named after a small market town in Xuanen called "Zhangguan". After the Hezha is cooked, it is marinated and becomes slightly dry. Fresh soup is added with pork, chicken, eggs, etc. to make fresh meat Hezha, chicken Hezha, egg Hezha and other series, with Hezha hot pot as the typical feature. Zhangguan Hezha is not only its special Hezha, but the ordering rules are more interesting: the restaurant charges per person, and the price on the menu is per person. According to the number of guests at each table, you can order a corresponding number of dry pots. For example, if there are less than four people, you can only order one pot, so the six of us can order two. The following dishes finally made us understand why we didn't order more. The idea of worrying about not having enough dishes at first was really ridiculous.
The waiter first brought kelp soup and a few side dishes, and then more than a dozen side dishes were served one after another, including Hezha, oil tea, meat, fish, vegetables, and snacks. In addition, we ordered two dry pots, which filled the table. What surprised us even more was that the dishes we finished could be refilled for free!
It is also worth mentioning that there are two kinds of rice here: potato rice and corn rice. The waiters each carry a wooden barrel. Just tell the waiter what kind of rice you want. Although the waiter suggested that corn rice is more suitable for the dregs, I think corn rice is relatively dry and not as fragrant as potato rice.
