As a museum professional I think it is amazing that such an old building can be put to modern use but with respect for the old building. However our room was cramped in relation to the prize we paid for it, and it was very hot. The least the hotel could do in a building where installing AC is impossible, is to provide fans. Also there naturally were no elevators, but the hotel could have provided porters, which would also have been historically correct.
Our 5 course dinner was good, but one should not come hungry to the table. Waiters were willing and friendly but inexperienced.
The dress code at dinner was not followed by the other guests.
Breakfast was superior though.
